Dry Ice, Argon, Nitrogen and Carbon Dioxide for Vinification

Dry Ice, solid carbon-dioxide (CO2), can help winemakers during harvest time while transporting and storing grapes. Dry ice sublimates into gaseous CO2 which can provide a temporary gaseous blanket to reduce oxygen levels. Dry ice is also helpful in keeping grapes cool to prevent spontaneous fermentation. Linde provides dry ice in a number of forms including rice pellets, standard pellets and half-cut blocks.

In addition to availability through the sublimation of dry ice, liquid carbon dioxide (CO2) is also available for vinification and for carbonating wines. It enhances freshness and acidity perceptions, decreases sweetness, intensifies bitterness and astringency and can lead to prickliness. Depending on the wine, too little CO2 can make white wines flat and too much can make reds harsh and tannic.

Nitrogen gas is used to flush lines, containers and equipment during transferring. It can also be used for sparging during bottling, to remove any additionally release oxygen and preserve the wine, as well as for blanketing tanks and barrels. 

Argon is a heavier inert gas also used throughout the winemaking process to extend the shelf life of wine. Argon gas serves as a longer term, thick blanket that creates a barrier between the oxygen and the wine to help protect the wine from oxidation and keep it tasting its best. It is used to replace air in the storage of wine, especially in the case of older wines.

Linde provides nitrogen, carbon dioxide and argon in a number of delivery modes, from cylinders and clusters to portable liquid vessels, as well as microbulk and bulk gas delivery systems.
